Biriyani is a traditional dish from the Indian subcontinent that typically consists of seasoned meat or vegetables cooked with rice. There are many variations of the dish, but a basic recipe might include the following ingredients:
Ingredients:
1 lb boneless chicken, beef or lamb (or a combination of these or vegetables of your choice)
2 cups basmati rice
1 onion, finely chopped
2 cloves of garlic, minced
1 inch piece of ginger, minced
2-3 green chilies, minced (optional)
1 teaspoon cumin powder
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder (optional)
1/2 cup plain yogurt
Salt to taste
1/4 cup ghee or vegetable oil
1 bay leaf
2-3 green cardamoms
2-3 cloves
1 cinnamon stick
2-3 cups chicken or beef broth (or water)
1/4 cup chopped fresh cilantro or mint (optional)
1/4 cup fried onions (optional)
Lemon wedges, for serving
Instructions:
Rinse the rice in several changes of water until the water runs clear. Soak the rice in enough water to cover it by 2 inches, for at least 30 minutes.
Heat the ghee or oil in a heavy-bottomed pot or Dutch oven over medium heat. Add the bay leaf, cardamoms, cloves, and cinnamon stick and fry for a few seconds until fragrant.
Add the onion, garlic, ginger, and green chilies (if using) and fry until the onion is golden brown.
Add the cumin powder, coriander powder, turmeric powder, and red chili powder (if using) and fry for a few seconds until fragrant.
Add the chicken, beef or lamb and sauté until the meat is browned.
Drain the rice and add it to the pot. Stir to mix the rice with the meat and spices.
Pour in the yogurt and enough broth or water to cover the rice and meat by 1 inch. Bring to a boil.
Reduce the heat to low and cover the pot with a tight-fitting lid. Simmer the biriyani for 18-20 minutes or until the rice is cooked and the liquid has been absorbed.
Turn off the heat and let the biriyani sit for 10 minutes before fluffing it with a fork.
Garnish with cilantro or mint and fried onions, if using. Serve with lemon wedges.
Note: You can adjust the quantity of water or broth to get the desired consistency of rice. Also, you can add some saffron strands to the boiling water for giving a richer aroma and color. Some people also like to add a tablespoon of ghee before serving.
Enjoy your Biriyani!
